We start the day with breakfast at our countryside home, followed by a visit to a local cheese producer to discover the craft behind Puglia’s most loved flavors.
Lunch takes us to Polignano a Mare, where we enjoy the famous octopus panino by the sea.
After a relaxed afternoon back at Parco dei Manieri, we come together in the kitchen to make orecchiette by hand, pairing them with tomato sauce and three local cheeses before sharing dinner.

Highlight of the day: Caseificio Artigiana

    THURSDAY

    3. DAY

After breakfast, the morning is left free to slow down and enjoy the surroundings. Lunch is relaxed and informal, with a variety of sandwiches and seasonal Puglian specialties, prepared with simple, authentic local ingredients. In the afternoon, we visit Asciano olive oil farm, exploring a landscape shaped by ancient olive trees — deeply integral to Puglia’s culture, art, and history, at the heart of Italy’s olive oil region. Later, we take a stroll through the historic center of Ostuni, known as La Città Bianca, wandering through its whitewashed streets and quiet corners.

Highlight of the day: La Masseria Asciano

      FRIDAY

      4. DAY

After breakfast, we visit Sabatelli Gastronomia in Castellana Grotte — a family-run pasta producer where tradition, craftsmanship, and quality ingredients come together in everyday Puglian cooking.
Here, we enjoy a full immersion into their pasta-making process, followed by a delicious and wholesome lunch prepared with their products. In the afternoon, we explore Alberobello, world-renowned for its iconic trulli and recognized as a UNESCO World Heritage Site, wandering through its unique streets and distinctive architecture. Back at Parco dei Manieri, we gather once again for a hands-on cooking class.
