Honorary Italian
My love for Italy grew out of loving Italian football. From there on, we can draw a straight line to getting obsessed with anything Italian. Style, beautiful and fast cars, food, wine, stunning scenery. Somehow I always ended up in and around Italians and was intrigued for their love of life and passion. GastroTrip was born from wanting to share this love with as many people as possible, going to the authentic heart of Italy. You know, the places where only locals go. I love the simplicity of Italian cuisine, always putting the ingredients in the focus, asking them to tell the story. Be part of the story.

Adam ran restaurants and bars in multiple well-known hotels across the UK and the Netherlands, as well as a largely successful restaurant group in Amsterdam.


Real Italian
I grew up in a small town in Puglia, San Vito dei Normanni, in a family deeply connected to agriculture — olive oil on one side, fruit and vegetables on the other. At twenty, I left Italy to study and grow abroad, carrying with me a lifelong passion for food, hospitality, and the cultures you discover around a table. GastroTrip was born from the desire to return to my roots and share Puglia the way I know it: genuine, unpretentious, and deeply human. My favourite dish at home is cavatelli ai frutti di mare — simple, seasonal, and honest, just like this land. I believe that la mia soddisfazione a tavola è la tua felicità: when food is shared with care, it becomes a memory.
Professional highlights:
Fabio was in charge of wide variety of gastronomic spots in the UK and in the Netherlands. He led high-end luxury hotel restaurants as well as multiple Michelin starred places.
